Ingredients (view qty in metric system instead)
10 ounce russet potato 1/2 cup all purpose flour plus additional 1 tbsp. beaten egg 3/4 tsp. salt 2 tbsp. butter 1/4 tsp. pepper 1/8 tsp. ground nutmeg
Directions
Boil potato with water to cover in a large saucepan until just tender. Drain potato and refrigerate overnight. Peel potato and mash with 1/2 cup flour in a large bowl. Add egg and 1/2 tsp. salt and knead until a dough just forms. Transfer dough to a floured surface and knead until smooth. Roll dough into a 12 inch long log. Cut log into 24 pieces. Roll each piece into a ball. Roll into 2 inch logs and form a crescent. Bring water to a boil in a large saucepan. Add dumplings to water. When dumplings rise to top, reduce heat and simmer 5 minutes. Transfer dumplings to a bowl of ice water.
Melt butter in a large skillet. Add dumplings and cook until golden brown, about 7 minutes. Sprinkle with pepper, nutmeg and 1/4 tsp. salt.
Makes about 2 dozen dumplings.
