Roasted Thanksgiving Turkey with Cranberry Stuffing

12 ounce loaf French bread, cubed 2 tbsp. butter 1 1/2 cups chopped onion 1 1/2 cups chopped celery 2 tsp. poultry seasoning 1 tsp. dried thyme 1/2 tsp. dried rosemary 1/4 tsp. salt 1/4 tsp. pepper 1 cup chopped fresh cranberries 1 tbsp. sugar 3/4 cup chicken broth 8 to 10 pound turkey, thawed, rinsed, giblets removed
Directions
Preheat oven to 375 degrees. Spread bread cubes in a single layer on 2 sheet pans. Toast bread about 10 to 12 minutes. Reduce oven to 350 degrees. Melt butter in a large saucepan over medium heat. Add onions and celery and cook 8 to 10 minutes, stirring occasionally, until vegetables are tender. Remove the pan from the heat and stir in toasted bread cubes, poultry seasoning, thyme, rosemary, salt and pepper. Stir together cranberries and sugar in a small bowl. Add the cranberries to the stuffing mixture and toss to combine. Drizzle the chicken broth over the stuffing mixture and toss well to moisten. Fill the turkey cavity with the stuffing. Truss the turkey legs to seal in the stuffing. Coat the inside of a roasting pan with cooking spray. Place a rack in the pan. Place the turkey, breast side up, on the rack. Roast turkey about 3 hours until temperature reaches 180 degrees. Transfer turkey to a platter. Tent loosely with foil and let turkey stand 20 minutes before carving and serving.
Serves 10 to 12.
