Ingredients (view qty in metric system instead)
2 1/2 pounds boneless pork loin 1 tsp. salt 1 tsp. pepper 1 tsp. garlic powder 3/4 tsp. onion powder 3/4 tsp. dry mustard 3/4 tsp. paprika 1/2 tsp. crumbled, dried sage leaves 1/4 tsp. cayenne pepper 1 1/2 tbsp. olive oil
Directions
Pat pork dry with paper towels. Place pork on a large sheet of plastic wrap. Stir together salt, pepper, garlic powder, onion powder, mustard, paprika, sage and cayenne in a small bowl. Rub spice mixture all over pork. Wrap pork tightly in the plastic wrap. Refrigerate pork one to two days.
Preheat oven to 400 degrees. Unwrap pork and rub with the olive oil. Place pork on a rack set in a roasting pan. Roast pork 1 1/2 to 2 hours until temperature reaches 160 degrees. Transfer pork to a cutting board and let stand 15 minutes. Slice pork thinly and serve.
Serves 6.
