Ingredients (view qty in metric system instead)
Glaze: 1 1/2 tsp. finely grated lime peel 6 tbsp. butter, softened 3 tbsp. fine dry bread crumbs 2 tbsp. chopped fresh parsley leaves 1 tbsp. mustard seed 1 tbsp. fresh lime juice 2 tsp. Dijon mustard 1 tsp. honey
Salmon: 8 salmon fillets, about 5 ounces each 1 tsp. salt 1/2 tsp. white pepper
Directions
For Glaze: Stir together lime peel, butter, bread crumbs, parsley, mustard seed, lime juice, Dijon and honey in a small bowl until well combined.
For Salmon: Preheat oven to 225 degrees. Lightly coat the inside of a large baking pan with cooking spray. Place salmon fillets, skin side down, in the prepared pan. Season with salt and white pepper. Spread glaze over top of salmon. Roast fish 20 to 30 minutes until salmon is just cooked through. Divide between plates and serve.
Serves 8.
