Roasted Rabbit in Cream Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
2 rabbits, skinned, dressed and cut into serving size pieces
cold saltwater or vinegar water
1 tsp. meat tenderizer granules
1/4 tsp. pepper
1 tsp. salt
2 1/2 cups all purpose flour
1/2 cup butter
4 cups heavy or whipping cream

Directions
Preheat oven to 325 degrees. Wash rabbit pieces thoroughly in saltwater or vinegar water. Pat rabbit pieces dry and sprinkle with meat tenderizer, salt and pepper. Place flour in a large bowl. Dredge rabbit pieces in flour to coat. Melt butter in a large oven-proof skillet. Add rabbit pieces and cook until browned on all sides. Pour cream over rabbit. Cover and roast rabbit 45 minutes. Uncover pan and roast an additional 20 to 30 minutes until rabbit is tender and cream is thickened.

Serves 4 to 6.
