Ingredients (view qty in metric system instead)
Prime Rib: 9 to 9 1/2 pound prime rib roast 1 tbsp. olive oil 1 tsp. salt 1 tsp. pepper 6 medium onions, peeled and quartered
Sauce: 1 1/2 cups sour cream 1/2 cup prepared horseradish 6 tbsp. chopped fresh chives 4 tsp. fresh lemon juice
Directions
For Prime Rib: Preheat oven to 450 degrees. Place beef, fat-side up, on a large sheet pan. Rub beef with oil and season with salt and pepper. Roast 20 minutes. Reduce oven to 350 degrees. Place onions around beef and roast about 2 hours until beef reaches 125 degrees for medium-rare, stirring onions occasionally. Transfer beef to a platter. Surround with onions and tent with foil while preparing sauce.
For Sauce: Whisk together sour cream, horseradish, chives, lemon juice, salt and pepper in a small bowl.
Slice beef and serve with sauce on the side.
Serves 8 to 10.
