Roasted Pork Tenderloin with Sweet and Spicy Glaze

Glaze: 3/4 cup brown sugar 1/3 cup cider vinegar 8.75 ounce can sliced peaches in heavy syrup, drained, peaches chopped and syrup reserved 1 tbsp. cornstarch 1/4 cup orange juice 8.25 ounce can crushed pineapple in syrup 1 tbsp. finely grated orange peel 1 clove garlic, peeled and crushed 1/2 tsp. crushed red pepper flakes 1/2 tsp. peeled, grated fresh ginger
Pork: 2 1/2 to 3 pounds pork tenderloin 1 tsp. salt 1 tsp. pepper
Directions
For Glaze: Stir together brown sugar, vinegar and peach syrup in a medium saucepan. Bring mixture to a boil over medium high heat. Reduce heat to low and simmer 10 minutes, stirring occasionally. Place orange juice in a small bowl. Add cornstarch and whisk to dissolve. Stir the cornstarch mixture into the glaze. Add pineapple with syrup, orange peel, garlic, red pepper flakes and ginger. Stir over medium heat until glaze boils and thickens.
For Pork: Preheat oven to 375 degrees. Place a rack in a baking pan. Season the pork with salt and pepper and place on the rack. Brush half of the glaze over pork. Roast about 30 to 35 minutes until temperature reaches 165 degrees. Remove pork from the oven and brush with remaining glaze. Let stand 5 to 10 minutes before slicing and serving.
Serves 6 to 8.
