2 tbsp. butter 8 ounces sliced fresh mushrooms 1 clove garlic, peeled and minced 1 tbsp. olive oil 1 1/2 pounds pork tenderloin 1/2 cup chicken broth 1/2 cup Marsala wine 1/2 tsp. salt 1/8 tsp. pepper
Directions
Preheat oven to 350 degrees. Melt butter in a large skillet over medium high heat. Add the mushrooms and cook 3 to 4 minutes until starting to soften, stirring frequently. Transfer the mushrooms to a bowl. Add the olive oil and pork to the skillet. Brown pork on all sides. Transfer the pork to a 13x9 inch glass baking dish. Add the garlic to the skillet and cook 1 minute, stirring frequently. Add the chicken broth and bring to a boil. Remove the skillet from the heat and stir in the mushrooms, Marsala, salt and pepper. Pour the marsala mixture over the pork. Wrap the dish tightly with foil and roast pork 20 minutes. Uncover the pork and roast another 10 minutes until pork is just cooked through and sauce is slightly thickened. Let pork stand 5 minutes before slicing and serving with sauce.
Serves 4.
