Roasted Jamaican Pork Tenderloin with Honey Banana Cure

4 to 5 small pork tenderloins, about 1 pound each 2 pounds unpeeled bananas 3/4 cup canola oil 1/3 cup honey 1/3 cup salt 1 cup chopped sweet onion 3 large cloves garlic 3 tbsp. pepper 2 tsp. ground cinnamon 1 1/2 tsp. cayenne pepper 1 1/2 tsp. ground cloves 1 1/2 tsp. ground allspice
Directions
Preheat oven to 350 degrees. Place unpeeled bananas on a sheet pan. Bake 25 to 30 minutes until bananas are soft. Peel bananas and transfer to a food processor. Add oil, honey, salt, onions, garlic, pepper, cinnamon, cayenne, cloves and allspice and blend until smooth. Place pork tenderloins in a shallow roasting pan. Rub banana mixture all over pork. Cover and refrigerate 12 hours.
Preheat oven to 400 degrees. Scrape excess banana mixture off pork. Heat a large nonstick skillet over medium high heat. Add pork tenderloins and sear on all sides. Return pork to roasting pan. Roast 8 to 10 minutes until pork reaches 155 degrees. Remove pork from oven, cover and let stand 5 minutes before slicing.
Serves about 12.
