Ingredients (view qty in metric system instead)
2 tablespoons oil 2 tablespoons butter or margarine, melted 3/4 teaspoons salt 1/4 teaspoon pepper 1/2 teaspoon dried thyme 1/4 teaspoon garlic powder 2 1/2 pounds red potatoes, quartered 2 tablespoons chopped fresh dill
Directions
Preheat oven to 325 degrees. In shallow roasting pan or jellyroll pan combine oil, butter, salt, pepper, thyme and garlic powder. Add potatoes; toss to combine. Roast, stirring occasionally, until lightly browned, 2 hours. If desired, broil until crisp, 4 minutes. Transfer to serving bowl; sprinkle with dill.
Makes 8 servings.
