Roasted Green Beans with Garlic and Lemon Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
1 pound fresh green beans, stemmed
3 medium cloves garlic, peeled and crushed
3 sprigs fresh thyme
1/4 cup olive oil
1/2 tsp. salt
1/2 tsp. pepper
3 tsp. fresh lemon juice
2 tsp. finely grated lemon peel

Directions
Preheat oven to 450 degrees. Toss together the green beans, garlic, thyme, olive oil, salt and pepper in a large baking dish. Spread beans in a single layer. Roast beans about 15 minutes, tossing occasionally, until tender and lightly browned. Discard thyme sprigs. Transfer beans to a serving bowl and add lemon juice and peel. Toss well to coat and serve warm or at room temperature.
