Ingredients (view qty in metric system instead)
12 to 14 pound fresh turkey your favorite stuffing recipe 1 tbsp. melted butter or margarine 1/2 tsp. salt 1/2 tsp. pepper 1 cup chicken broth
Directions
Preheat oven to 325 degrees. Remove giblets, neck and any fat from turkey body and neck cavities. Rinse and pat dry turkey inside and out. Lightly spoon some stuffing into neck cavity. Fold skin flap under back and secure with skewers or toothpicks. Loosely stuff body cavity. Tie or clamp legs together. Twist wing tips under back. Brush skin all over with melted butter and season with salt and pepper. Place turkey breast-side up on a rack in a shallow roasting pan. Insert a meat thermometer into center of 1 thigh, next to body but not touching bone, Add broth to pan. Roast 3 1/2 to 4 hours, basting every 30 minutes with pan juices, adding more broth or water to pan if necessary. If breast starts to brown too much cover loosely with foil. About 2/3 through roasting time untie drumsticks so heat can penetrate body cavity. When thermometer registers 170 degrees and stuffing registers 165 degrees remove turkey to a serving platter. Let rest 30 minutes before serving for juicier meat and easier carving.
