Ingredients (view qty in metric system instead)
1 Cornish game hens, about 1 1/2 pounds each 2 tbsp. olive oil 1 cup pomegranate juice 1/2 tsp. salt 1/2 tsp. dried thyme 1/8 tsp. pepper
Directions
Preheat oven to 375 degrees. Place a rack in the bottom of a roasting pan. Tie the legs of the Cornish hens together and place breast side up on the rack. Brush each hen with 1 tbsp. oil and sprinkle with salt, thyme and pepper. Roast Cornish hens 50 to 60 minutes until juices run clear. Meanwhile, place the pomegranate juice in a small saucepan and simmer 10 minutes. Brush the pomegranate glaze over the hens and roast another 5 minutes. Serve Cornish hens immediately.
Serves 2.
