Roasted Christmas Turkey with Herbed Sausage Corn Bread Stuffing

Ingredients (view qty in metric system instead)
Stuffing: 1 pound ground pork sausage 1 1/2 cups chopped onion 1 cup chopped celery 6 cups coarsely crumbled corn bread 1/3 cup half and half 1/4 cup sherry 1 tsp. dried thyme 1 tsp. dried basil 1 tsp. dried oregano 1/2 tsp. garlic powder
Turkey: 4 tsp. salt 14 to 16 pound thawed turkey, rinsed and patted dry melted butter for basting
Directions
For Stuffing: Cook sausage in a large skillet over medium high heat until browned and crumbly. Add onions and celery. Cook 5 minutes, stirring occasionally, until vegetables are tender. Remove the skillet from the heat and add corn bread, cream, sherry, thyme, basil, oregano and garlic powder.
For Turkey: Preheat oven to 325 degrees. Place a rack in a large roasting pan. Rub the turkey inside and out with the salt. Pack the prepared stuffing loosely into the turkey cavity. Place the turkey, breast side up, into the prepared pan. Roast turkey about 4 to 5 hours, basting occasionally with melted butter, until temperature reaches 185 degrees. Transfer the turkey to a cutting board and tent with foil. Let turkey stand 20 minutes before carving.
Serves 10 to 12.
