Roasted Chicken Legs with Jalapeno and Tomato

Ingredients (view qty in metric system instead)
1 tbsp. olive oil 2 tsp. fresh lime juice 1 pound whole chicken legs 2 small tomatoes, thinly sliced 2 fresh jalapeno chiles, stemmed, seeded and sliced 1 small onion, thinly sliced 1 clove garlic, thinly sliced 1/2 tsp. salt 1/2 cup chicken broth
Directions
Preheat oven to 450 degrees. Stir together oil and lime juice in a large bowl. Add chicken legs and toss to coat. Place chicken legs in a small roasting pan. To oil mixture left in bowl add tomatoes, jalapenos, onion, garlic and salt. Stir well. Spread over and around chicken legs and roast 30 minutes until chicken is cooked through. Place chicken on a plate and tent with foil. Add broth to roasting pan and bring to a boil, scraping up brown bits. Boil until slightly thickened. Spoon over chicken to serve.
Serves 2.
