Roast Wild Turkey with Spicy Sausage Stuffing

1 wild turkey, cleaned and dressed 1 cup salt 1/2 cup brown sugar 1 gallon cold water 4 tbsp. melted butter plus additional for basting 1 large onion, peeled and diced 1/2 cup chopped celery 1 pound ground spicy sausage 6 cups bread cubes 3 large eggs, beaten to blend 1/4 cup hot water
Directions
Stir together the salt, brown sugar and cold water in a large container. Add turkey and let soak 1 hour, turning occasionally.
Preheat oven to 325 degrees. Remove turkey from the brine, rinse and dry thoroughly. Melt 4 tbsp. butter in a medium saucepan over medium heat. Add onions and celery and cook about 8 minutes, stirring frequently, until softened. Transfer the vegetable mixture to a large bowl and add sausage, bread cubes, eggs and hot water. Stir until moistened, adding more water if necessary. Carefully loosen the skin on the turkey breast with your fingers. Spread a layer of the stuffing between the skin and breast. Stuff the turkey cavity with remaining stuffing and truss legs. Cover the turkey with cheesecloth. Drizzle additional melted butter over the cheesecloth until saturated. Transfer turkey to a large roasting pan. Roast turkey about 40 minutes per pound, basting occasionally with additional melted butter.
Makes 1 turkey.
