Ingredients (view qty in metric system instead)
1/2 cup finely chopped celery 4 cups prepared mashed potatoes 1 cup chopped onion 1 1/2 tsp. salt 1 large egg, beaten to blend 1/2 tsp. pepper 2 cups cooked, chopped roast beef 1 cup sliced mushrooms 1/3 cup brown gravy 3 tbsp. minced fresh parsley, divided 2 tbsp. butter, diced
Directions
Preheat oven to 400 degrees. Mix together mashed potatoes, onion and egg in a large bowl. In a separate bowl, combine beef, 2 tbsp. parsley, celery, mushrooms, salt, pepper and gravy. Grease a 2 quart casserole dish. Spoon half of potato mixture into bottom of prepared dish. Top with meat mixture. Spread remaining mashed potato mixture over meat. Sprinkle with remaining 1 tbsp. parsley and dot with butter. Bake 20 to 25 minutes until browned.
Serves 4 to 6.
