Ingredients (view qty in metric system instead)
2 pounds baking potatoes, peeled and quartered 1/2 cup heavy or whipping cream 1/4 cup milk 5 tbsp. cold butter, diced 1/4 tsp. salt 1/4 tsp. pepper
Directions
Place potatoes in a large saucepan with cold water to cover. Bring to a boil. Reduce heat. Cover and simmer 15 to 20 minutes until potatoes are tender. Combine the cream and milk in a small saucepan. warm over low heat. Drain potatoes. Return potatoes to the pan and mash until smooth. Add butter, salt and pepper. gradually add the hot cream mixture and mash until fluffy.
Serves 4 to 6.
