Ingredients (view qty in metric system instead)
Crust: 9 whole graham crackers, broken into pieces 1 tbsp. sugar 6 tbsp. melted butter
Filling: 1 1/4 cups sugar 1/2 cup unsweetened cocoa powder 1/4 cup cornstarch 3 1/2 cups half and half 4 large egg yolks 4 ounces chopped bittersweet or semisweet chocolate 3 ounces chopped unsweetened chocolate 2 tbsp. butter 1 tsp. vanilla extract
Directions
For Crust: Preheat oven to 350 degrees. Combine graham crackers and sugar in a food processor and grind to fine crumbs. Add melted butter and blend until crumbs are evenly moistened. Press the crust mixture into the bottom and up sides of a 9 inch glass pie dish. Bake crust 8 minutes until set. Transfer crust to a rack and cool completely.
For Filling: Whisk together sugar, cocoa powder and cornstarch in a medium saucepan. Whisk in half and half and yolks. Cook over medium heat, whisking constantly, until custard is thickened and boiling. Remove pan from the heat. Whisk in both chocolates and butter until melted and smooth. Whisk in vanilla. Pour filling into the prepared crust. Cover and refrigerate at least 6 hours until filling is set.
Slice pie and serve with dollops of whipped cream if desired.
Serves 8 to 10.
