Ingredients (view qty in metric system instead)
Pudding: 1 cup all purpose flour 1/3 cup sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1 1/2 cups diced rhubarb 1/4 cup raisins 1/2 cup milk 1 large egg 1/2 tsp. vanilla extract
Sauce: 1 cup boiling water 1/4 cup brown sugar 1/4 cup butter 1 tbsp. lemon juice 1 tsp. grated lemon peel pinch nutmeg
Directions
For Pudding: Preheat oven to 350 degrees. Mix together flour, sugar, baking powder, baking soda and salt in a large bowl. Stir in rhubarb and raisins. In a separate bowl beat together milk, egg and vanilla just until combined. Stir into flour mixture. Turn out into a greased 8x8 inch baking pan.
For Sauce: Combine sugar and butter with boiling water. Stir until sugar dissolves and butter is melted. Add lemon juice, peel and nutmeg. Pour over pudding and bake 30 minutes until top is golden brown and firm.
Serves 4 to 6.
