Ingredients (view qty in metric system instead)
12 ounces thinly sliced corned beef 2 tbsp. butter, softened 8 slices rye or pumpernickel bread 8 slices Swiss cheese 1 1/2 cups sauerkraut, drained 1/4 cup Thousand Island dressing
Directions
Butter 1 side of each bread slice. Heat a large skillet over medium heat. Add 2 bread slices to skillet, butter-side down. Top each bread slice with 2 slices Swiss, 1 tbsp. dressing, 3 ounces beef and a quarter of the sauerkraut. Top with 2 bread slices, butter-side up. Cook 3 minutes on 1 side until golden. Turn sandwich over and cook another 3 minutes until golden and cheese is melted. Repeat with remaining sandwiches.
Makes 4 sandwiches.
