Ingredients (view qty in metric system instead)
1 1/2 pounds lean ground chuck 1 1/2 cups rye bread crumbs 2 large eggs, beaten to blend 1/2 cup chopped onion 1/4 cup sweet pickle relish 1/4 cup prepared Russian salad dressing 1 tbsp. worcestershire sauce 1 tsp. salt 1/4 tsp. pepper 8 ounce can sauerkraut, drained 1 1/2 cups shredded Swiss cheese
Directions
Preheat oven to 350 degrees. Combine beef, bread crumbs, eggs, onion, relish, Russian dressing, worcestershire, salt and pepper in a large bowl. Mix well with your hands. Transfer meat mixture to a sheet of plastic wrap and form into a 7x14 inch rectangle. Evenly spoon sauerkraut and 1 cup cheddar over meat, leaving a 1 inch border around edges. Roll up meat, starting at short end, using plastic wrap as an aid. Place roll seam-side down in a lightly greased 9x5 inch loaf pan. Bake meatloaf 30 to 40 minutes until meat reaches 165 degrees. Sprinkle remaining 1/2 cup cheddar over top of meatloaf. Bake 5 minutes until cheese is melted. Let stand 5 minutes before slicing.
Serves 6.
