Ingredients (view qty in metric system instead)
3 strips bacon 2 cups dry pinto beans, picked over and washed 6 cups water 1 1/2 tsp. minced garlic 1 large tomato, peeled, seeded and chopped 4 tbsp. bacon fat 1/2 tsp. salt
Directions
Fry bacon until crisp. Drain, reserving 4 tbsp. drippings, and crumble Put beans in a pot with water, garlic and tomato. Cover and simmer 2 hours until beans are tender. Stir in bacon drippings and salt. Cover and simmer 30 minutes. Drain and mash beans. Place mashed beans in a skillet with crumbled bacon. Fry over medium heat until beans are dry, stirring often. Adjust seasoning if desired. Refrigerate in a covered container. When reheating add water if necessary to give beans a pasty consistency.
Serves 6 to 8.
