Ingredients (view qty in metric system instead)
6 slices bacon 1 1/2 cups frozen, thawed sliced okra 3 stalks celery, chopped 1 large onion, peeled and chopped 15 ounce can diced tomatoes with juices 2 cups cooked long-grain white rice 1/8 tsp. cayenne pepper 1/2 tsp. worcestershire sauce 1/4 tsp. salt
Directions
Cook bacon in a large skillet until crisp and browned. Drain bacon on paper towels. Crumble bacon. Pour off all but 2 tbsp. oil from skillet. Add okra, celery and onion to skillet. Cook about 8 minutes until onion is crisp-tender. Stir in canned tomatoes with juices, rice and bacon. Simmer about 2 minutes until most of liquid is absorbed. Stir in cayenne, worcestershire and salt.
Serves 6.
