Ingredients (view qty in metric system instead)
2 tbsp. butter 1 cup diced onion 1/2 cup diced celery 1/2 cup diced leeks, white part only 1/4 tsp. minced garlic 2 tbsp. all purpose flour 4 cups milk 1 cup chopped clams with juices 1 cup diced potatoes 1 tbsp. salt 1/4 tsp. white pepper 1 tsp. dried thyme, crumbled 1/2 cup heavy or whipping cream
Directions
Melt butter over medium heat in a large pot. Add onion, celery, leeks and garlic and cook 3 minutes, stirring frequently. Stir in flour. Whisk in milk. Drain clams and add juices to soup. Bring to a boil, stirring frequently. Add potatoes, salt, pepper and thyme. Reduce heat and simmer 10 minutes. Add clams and simmer 5 to 8 minutes. Stir in cream and bring to a simmer. Serve hot.
Serves 4.
