Red Lobster Trout Vera Cruz Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
1/4 cup sliced black olives
1/4 cup sliced green olives
1/2 cup olive oil
1/2 cup dry white wine
1 tsp. dried oregano
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped tomatoes
four 4 ounce boned trout fillets
1/4 cup melted butter
1/2 tsp. salt
1/2 tsp. pepper

Directions
Preheat oven to 350 degrees. Stir together olives, oil, wine, oregano, onion, bell pepper and tomatoes in a medium bowl. Let stand 5 minutes at room temperature.

Place trout fillets in a baking pan lightly coated with cooking spray. Brush melted butter over trout and season with salt and pepper. Pour olive mixture over trout and bake 20 to 25 minutes until trout is cooked through.

Serves 2.
