Ingredients (view qty in metric system instead)
Crust: 10 ounce package Lorna Doone cookies, crushed 8 tbsp. melted butter 1/4 cup sugar 1 envelope powdered gelatin
Filling: 16 ounces cream cheese, softened 1 cup sour cream 2 large eggs 2 tbsp. butter, softened 2 tbsp. cornstarch 1 cup sugar 1 tsp. vanilla extract crushed cookie crumbs for garnish
Directions
For Crust: Preheat oven to 350 degrees. Combine crushed cookies, melted butter, sugar and gelatin in a food processor. Blend until evenly moistened. Press evenly over the bottom of a greased 9 inch springform pan. Bake 8 minutes. Refrigerate while preparing filling.
For Filling: Beat together cream cheese, sour cream, eggs, butter, cornstarch, sugar and vanilla until smooth and creamy. Pour over crust. Bake 30 to 35 minutes until knife inserted in center comes out clean. Cool at least 30 minutes before slicing.
Serves 8 to 10.
