Ingredients (view qty in metric system instead)
2/3 cup chopped almonds 2 cups all purpose flour 3/4 tsp. ground cinnamon 1/8 tsp. salt 1 large egg, separated 1 cup sugar 1/4 cup brown sugar 1 tsp. vanilla extract 1 cup butter, diced, room temperature 2/3 cup seedless raspberry preserves
Directions
Preheat oven to 350 degrees. Lightly butter an 11x14 inch jelly roll pan. Mix flour, cinnamon, salt, yolk, both sugars and vanilla in a food processor. Add butter and pulse to combine. Process just until a dough forms. Press dough evenly into the bottom of the prepared pan. Spread preserves over top. Whisk egg white in a small bowl until frothy and brush lightly over preserves. Sprinkle with almonds, pressing to adhere. Bake about 30 to 35 minutes until edges are browned and center is almost set. Loose crust sides with a spatula immediately after removing pan from oven. Cool completely. Cut into squares.
Makes about fifty 1 1/2 inch squares.
