Ingredients (view qty in metric system instead)
1/2 cup softened butter 2/3 cup brown sugar 1 tsp. vanilla extract 1/2 cup all purpose flour 1/4 tsp. baking soda 1 1/2 cups old fashioned oats 1 cup chopped walnuts 1 cup raisins 1/2 cup raspberry preserves
Directions
Preheat oven to 375 degrees. Beat together butter, brown sugar and vanilla in a large bowl until well blended. Mix in flour and baking soda. Stir in oats and walnuts. Reserve 1 cup oat mixture. Press remaining oat mixture into the bottom of an 8x8 inch baking pan. Stir together raisins and preserves in a small bowl. Spread raisin mixture evenly over oat crust, leaving a 1/2 inch margin all the way around. Sprinkle reserved cup oat mixture over the preserves, pressing down lightly. Bake 25 to 30 minutes until golden brown. Transfer pan to a rack and cool completely. Cut into bars.
Makes about 20 bars.
