8 ounces cream cheese, softened 1/3 cup plus 2 cups sugar 5 large eggs, divided 4 ounces chopped unsweetened chocolate 1/2 cup butter 1 tsp. vanilla extract 1 cup all purpose flour 1/2 tsp. baking powder 1/2 tsp. salt 3/4 cup seedless raspberry preserves, melted slightly
Directions
Preheat oven to 350 degrees. Grease and flour a 13x9 inch baking pan. Stir together cream cheese, 1/3 cup sugar and 1 egg in a small bowl until well blended. Combine chocolate and butter in a small saucepan. Melt over low heat, stirring until smooth. Scrape chocolate mixture into a large bowl and let stand 15 minutes. Beat in remaining 2 cups sugar and vanilla. Beat in remaining 4 eggs one at a time, mixing well after each addition. Stir in flour, baking powder and salt until just combined. Pour half of the batter into the prepared pan. Drop spoonfuls of the cream cheese mixture over the batter and gently spread. Spoon raspberry preserves over the cream cheese layer. Carefully spoon remaining chocolate batter over the preserves. Bake brownies 45 to 50 minutes until set. Transfer to a rack and cool completely. Cut into bars. Store, refrigerated, in an airtight container.
Makes 3 to 4 dozen brownies.
