Ingredients (view qty in metric system instead)
1/3 cup butter 2 1/2 Tbsp. sugar 1/3 Tsp. salt 1 egg yolk 1 cup all purpose flour 1/3 cup fine chopped almonds 10 ounces frozen raspberries, partially thawed and drained 2 egg whites 1 cup sugar 1 Tbsp. lemon juice 1/4 Tsp. vanilla 1/4 Tsp. almond extract 1/8 Tsp. salt 1 cup heavy or whipping cream
Directions
Prehear oven to 400 degrees. Grease a 10 inch pie pan. Cream together butter, sugar and salt until fluffy. Beat in yolk. Mix in flour and almonds and press into prepared pan. Bake 12 minutes. Cool. Beat together raspberries, egg whites, sugar, lemon juice, vanilla, almond extract and salt until thickened and doubled in volume. Whip cream to soft peaks and fold into raspberry mixture. Spread into prepared crust. Chill 8 hours before serving.
Makes 1 10-inch pie
