Ingredients (view qty in metric system instead)
1 3/4 cups all purpose flour 1 tsp. baking soda 1 1/2 tsp. baking powder 1/8 tsp. salt 1 cup butter, room temperature 1 cup sugar 1 cup brown sugar 2 large eggs 1 tsp. vanilla extract 1 cup sweetened coconut flakes 1 cup old-fashioned rolled oats 2 cups cornflakes, crushed coarsely
Directions
Preheat oven to 350 degrees. Lightly grease sheet pans. Sift together flour, baking soda and baking powder in a medium bowl. Stir in salt. Beat together butter and both sugars in a large bowl until light and fluffy. Add eggs 1 at a time, beating after each addition. Beat in vanilla. Gradually stir in flour mixture until well combined. Stir in coconut, oats and cornflakes. Drop rounded teaspoonfuls of dough onto prepared pan, spacing 2 inches apart. Bake cookies 10 to 12 minutes until lightly browned. Cool on pan 3 minutes. Transfer cookies to racks and cool completely.
Makes about 5 dozen cookies.
