Ingredients (view qty in metric system instead)
1 pound dried pink or calico beans, picked through 1 pound chopped smoked bacon 1 large red onion, peeled and chopped 1 tbsp. ground cumin 2 cups orange juice 1 tbsp. minced canned chipotle chilies 1/2 tsp. salt 1/2 tsp. pepper
Directions
Combine beans with water to cover in a large bowl. Let beans soak overnight. Cook bacon in a large pot until crisp. Drain bacon on paper towels. Add onion and cumin to pot and cook 5 minutes, stirring frequently. Stir in orange juice and chipotles and bring to a boil. Add beans with water and bring to a boil. Reduce heat to medium, cover and simmer 2 hours. Uncover and simmer 30 minutes until beans are tender and liquid is thickened. Stir in bacon, salt and pepper. Serve hot.
Serves 8 to 10.
