6 slices bacon, fried until crisp, drained and crumbled 2 rabbits, skinned, dressed and cut into serving size pieces 3/4 cup all purpose flour 2 1/2 tsp. dry mustard 1 1/2 tsp. dried thyme 1/2 tsp. pepper 1 1/2 tsp. salt 1 tbsp. vegetable oil 3/4 cup chicken broth 1 large onion, peeled and chopped 4 ounces sliced mushrooms 3 tbsp. butter 2 1/2 cups sour cream 1/4 cup dry sherry
Directions
Stir together flour, mustard, thyme, salt and pepper in a large bowl. Roll rabbit pieces in flour mixture until well coated. Heat oil in a large skillet. Add rabbit pieces and brown on all sides. Add broth, cover and simmer 15 minutes until rabbit is tender. While rabbit is simmering, Melt butter in another large skillet. Add onion and mushrooms and cook 5 minutes until onions are softened. Stir onion mixture and sour cream into rabbit. Simmer 5 minutes-don't boil. Stir in sherry and bacon and heat through.
Serves 6 to 8.
