Quick and Easy Salmon with Almond Chive Crust

Ingredients (view qty in metric system instead)
1/4 cup sliced almonds 2 tbsp. chopped fresh chives 1 tbsp. chopped fresh parsley leaves 1/2 tsp. finely grated lemon peel 2 slices crustless white bread, torn into pieces 1/2 tsp. salt, divided 4 salmon fillets, about 6 ounces each 1/4 tsp. pepper
Directions
Preheat oven to 400 degrees. Line a sheet pan with nonstick foil. Combine almonds, chives, parsley, lemon peel, bread pieces and 1/4 tsp. salt in a food processor. Blend until finely chopped. Place salmon fillets on the prepared pan and season with pepper and remaining 1/4 tsp. salt. Sprinkle almond mixture evenly over top of salmon fillets. Press lightly to adhere. Bake about 10 minutes until fish flakes easily or to desired doneness.
Serves 4.
