Ingredients (view qty in metric system instead)
4 pound boneless venison loin 2 tbsp. olive oil 3/4 tsp. salt 1 tsp. pepper 1/2 tsp. chopped, dried juniper berries
Directions
Preheat oven to 400 degrees. Rub the venison loin all over with the olive oil. Stir together salt, pepper and juniper berries in a small bowl. Rub all over the venison, pressing the spices into the meat. Set a rack in the bottom of a roasting pan. Place the seasoned venison onto the rack. Roast venison about 25 to 30 minutes for medium rare, basting every 5 minutes with the pan juices. Transfer the roasted venison to a cutting board and tent loosely with foil. Let venison stand 10 to 15 minutes before slicing and serving.
Serves 6 to 8.
