Ingredients (view qty in metric system instead)
1/2 cup water 2 tbsp. butter 1 large onion, peeled and chopped 1 tsp. crumbled dried thyme 1 bay leaf 5 cups chicken broth 3 chicken bouillon cubes 1/4 tsp. pepper 1 1/2 pounds red new potatoes, peeled and chopped 28 ounce can crushed tomatoes with juices
Directions
Combine water and butter in a large saucepan over medium heat. Add onion, thyme and bay leaf. Cover and simmer 5 minutes. Add chicken broth and bouillon cubes and bring to a boil. Stir in pepper and potatoes and simmer 10 minutes until potatoes are tender. Stir in tomatoes with juices and simmer 3 minutes. Ladle into bowls and serve.
Serves 4 to 6.
