Quick and Easy Pork Chops with Ginger Mustard

Ingredients (view qty in metric system instead)
2 tbsp. butter 4 pork loin chops, about 1 inch thick 2 inch piece fresh ginger, peeled and sliced into thin strips 1/4 cup dry white wine 2 tbsp. Dijon mustard 1 cup heavy or whipping cream 1/4 tsp. salt 1/4 tsp. pepper
Directions
Melt butter in a large skillet over medium heat. Add pork chops to skillet and brown on both sides. Reduce heat to low, cover and cook chops about 10 to 15 minutes until cooked through. Transfer pork chops to a platter and tent with foil. Add ginger to skillet and cook 2 minutes, stirring frequently. Increase heat to high and add wine. Boil wine until reduced by half. Stir in Dijon and cream and heat to a boil. Boil about 4 to 5 minutes until sauce is reduced by half. Stir in salt and pepper. Uncover pork chops, pour sauce over and serve immediately.
Serves 4.
