Quick and Easy Pineapple Honey Mustard Chicken

Ingredients (view qty in metric system instead)
20 ounce can pineapple slices in juice 4 boneless, skinless chicken breast halves 1 tsp. salt 1/2 tsp. pepper 2 large cloves garlic, peeled and minced 1 tsp. dried thyme 1 tbsp. cornstarch 1/4 cup Dijon mustard 1/4 cup honey
Directions
Drain pineapple slices, reserving juice. Sprinkle chicken with salt, pepper, garlic and thyme. Heat oil in a large skillet. Add chicken to skillet and brown on both sides. Stir together 2 tbsp. reserved pineapple juice and cornstarch in a small bowl until smooth. Stir remaining pineapple juice into the skillet with chicken along with Dijon and honey. Cover and simmer 15 minutes. Stir cornstarch mixture into the skillet. Add pineapple. Cook, stirring, until sauce boils and thickens. Serve sauce over chicken.
Serves 4.
