Ingredients (view qty in metric system instead)
1/2 cup finely chopped pecans 1/3 cup fine dry breadcrumbs 1/2 cup all purpose flour 1/4 tsp. salt 1/4 tsp. pepper 3 large eggs 4 pork tenderloins, about 6 ounces each 3 tbsp. olive oil
Directions
Preheat oven to 375 degrees. Stir together pecans and breadcrumbs in a pie plate. Stir together flour, salt and pepper in another pie plate. Whisk eggs to blend in a wide shallow bowl. Dredge the pork in the seasoned flour mixture, then roll in eggs to coat. Transfer pork to the pecan mixture and roll until thoroughly coated. Heat oil in a large ovenproof skillet over medium heat. Add pork and cook about 3 minutes per side until browned. Transfer skillet to the oven and bake pork about 10 minutes until cooked through. Slice pork and serve.
Serves 4.
