Ingredients (view qty in metric system instead)
1/2 cup chopped fresh cilantro leaves 1/4 cup chopped fresh mint leaves 1 inch piece peeled fresh ginger, chopped 1 large clove garlic, peeled and chopped 1/2 cup vegetable oil 5 tbsp. rice wine vinegar 3 tbsp. orange juice 3/4 tsp. sesame oil 1 tsp. salt 1 tsp. sugar 1/4 tsp. dried red pepper flakes 4 catfish fillets, about 6 to 8 ounces each 1/2 tsp. pepper
Directions
Combine cilantro, mint, ginger and garlic in a food processor. Blend until finely minced. Add oil, rice vinegar, orange juice and sesame oil. Blend until smooth. Transfer the sauce mixture to a small bowl. Stir in salt, sugar and red pepper flakes. Transfer 4 tbsp. of the sauce mixture to a large skillet. Heat sauce over medium high heat. Add catfish fillets and cook about 4 minutes per side until cooked through. Divide catfish between plates and spoon remaining sauce over. Serve immediately.
Serves 4.
