Ingredients (view qty in metric system instead)
5 tbsp. olive oil 1 1/2 cups peeled, minced onion 3 cups long grain rice three, 14.5 ounce cans chicken broth 1/2 cup lemon juice 1 1/2 tbsp. finely grated lemon peel 3/4 tsp. pepper
Directions
Heat oil in a large saucepan over medium high heat. Add onion and cook about 10 minutes, stirring occasionally, until tender. Add rice and cook, stirring, 2 minutes. Add chicken broth, lemon juice, lemon peel and pepper to the pan and bring to a boil. Reduce heat to low. Cover and simmer about 20 minutes until rice is tender and most of liquid is absorbed. Remove the pan from the heat and let stand 5 minutes. Fluff rice with a fork and serve.
Serves 6.
