Ingredients (view qty in metric system instead)
2 tsp. pepper 1 tsp. salt 1 tsp. crumbled dried rosemary 1 large clove garlic, peeled and minced 12 ounce boneless pork tenderloin 1 tbsp. olive oil
Directions
Stir together pepper, salt, rosemary and garlic in a small bowl. Rub the herb mixture all over the pork and let stand 15 minutes. Meanwhile, preheat oven to 400 degrees. Heat oil in a large cast iron skillet over medium high heat. Add pork and brown on all sides, turning frequently. Transfer skillet to the oven and roast pork about 20 minutes until cooked through, turning occasionally. Transfer pork to a cutting board and let stand a few minutes before slicing and serving.
Serves 2.
