Ingredients (view qty in metric system instead)
1 quart vanilla or coffee ice cream, softened slightly 1 cup coffee flavored liqueur 1/2 cup heavy or whipping cream 1 1/2 tsp. instant espresso powder 1 1/2 tsp. sugar
Directions
Make layers of softened ice cream and coffee liqueur in tall parfait glasses. Freeze at least 30 minutes. In a medium bowl, beat together the cream, espresso powder and sugar to stiff peaks. Spoon dollops of the whipped cream on top of parfaits just before serving.
Makes 4 parfaits.
