Ingredients (view qty in metric system instead)
1 tbsp. vegetable oil 1 pound chicken tenders, cut into 1 inch pieces 16 ounce package frozen, thawed stir-fry vegetables 15 ounce can black beans, drained and rinsed 1 cup chunky salsa one 8 inch tortilla, cut into 2x1 inch strips 1 cup shredded cheddar cheese sour cream
Directions
Heat oil in a large skillet. Add chicken and cook 3 to 4 minutes until browned. Stir in vegetables, beans and salsa. Reduce heat, cover and cook 6 to 8 minutes until vegetables are tender. Sprinkle with tortilla strips and cheddar. Cover and cook 2 minutes until cheese is melted. Divide between plates and garnish with dollops of sour cream.
Serves 4 to 5.
