Ingredients (view qty in metric system instead)
Filling; 5 cups pitted canned or frozen tart red cherries 2 1/2 tbsp. lemon juice 1/3 cup sugar 1/3 cup brown sugar 2 1/2 tbsp. cornstarch 1 tsp. ground cinnamon 1/4 tsp. ground nutmeg
Topping: 1 cup all purpose flour 1 tbsp. sugar 1 tsp. baking powder 1/4 tsp. salt 2 tbsp. cold butter, diced 1/3 to 1/2 cup milk
Directions
For Filling: Drain cherries, reserving 1/4 cup juice. Stir in lemon juice and set aside. Combine both sugars, cornstarch, cinnamon and nutmeg in a medium saucepan. Stir in reserved 1/4 cup cherry juice and heat to a boil. Boil 2 minutes, stirring occasionally. Stir in cherries. Pour filling into an ungreased 8x8 inch baking pan.
For Topping: Preheat oven to 450 degrees. Combine flour, sugar, baking powder and salt in a medium bowl. Cut in butter until coarse crumbs form. Stir in enough milk just to moisten topping. Drop tablespoonfuls of topping mixture over filling. Bake about 10 to 13 minutes until filling is bubbly and topping is golden brown.
Serves 6 to 8.
