Quick and Easy Broiled Steak with Blue Cheese Crust

Ingredients (view qty in metric system instead)
1/2 cup coarsely crumbled blue cheese 1/4 cup dry breadcrumbs or panko 1 tbsp. chopped fresh parsley leaves 4 filets, about 6 to 8 ounces each 1/2 tsp. salt 1/2 tsp. pepper 2 tbsp. butter
Directions
Preheat broiler. Stir together blue cheese, breadcrumbs and parsley in a small bowl until well mixed. Season filets with salt and pepper. Melt butter in a large skillet over medium high heat. Add filets to the skillet and cook about 5 minutes per side for medium rare. Transfer steaks to a sheet pan. Press blue cheese mixture into the tops of the steaks. Broil about 2 minutes until cheese is melted and browned. Transfer filets to plates and serve immediately.
Serves 4.
