Ingredients (view qty in metric system instead)
1 cup chopped walnuts, toasted 1 2/3 cup soft, fresh breadcrumbs 1/2 tsp. ground sage 3 tbsp. melted butter 3 tbsp. maple syrup 1 tbsp. olive oil 6 boneless, skinless chicken breast halves, about 4 to 6 ounces each 1 tsp. salt 1 tsp. pepper
Directions
Preheat oven to 450 degrees. Combine walnuts, breadcrumbs and sage in a food processor. Pulse until walnuts are finely ground. Transfer the mixture to a medium bowl. Drizzle with melted butter and syrup and toss to blend. Heat oil in a large oven proof skillet over medium high heat. Season chicken on both sides with salt and pepper. Place chicken in the skillet and cook about 4 minutes until one side is golden brown. Turn the chicken over. Mound the walnut mixture on the cooked side of the chicken. Transfer the skillet to the oven. Bake chicken about 8 minutes until chicken is cooked through and the topping is golden brown. Divide chicken between plates and serve immediately.
Serves 6.
