Ingredients (view qty in metric system instead)
6 large eggs 1 cup milk 3 tbsp. vegetable oil 1 cup shredded wheat bran cereal 1 cup all purpose flour 2 tsp. baking powder 1/2 tsp. ground cinnamon 1/4 tsp. salt 2 cups cored, finely chopped Granny Smith apples 1/4 cup chopped pecans
Directions
Lightly grease a griddle and heat to 400 degrees. Beat together eggs, milk and oil in a large bowl. Stir in cereal and let mixture stand 2 minutes. Stir together flour, baking powder, cinnamon and salt in a small bowl. Stir flour mixture into batter until evenly moistened. Fold in apples and pecans. Pour 1/4 cup batter for each pancake onto the prepared skillet. Cook about 3 to 4 minutes per side until pancakes are golden brown. Serve hot.
Makes about 12 to 16 pancakes.
