Ingredients (view qty in metric system instead)
4 boneless skinless chicken breast halves, about 4 to 6 ounces each 1 cup finely crushed barbecue flavored potato chips 1/4 tsp. paprika 1/8 tsp. pepper 1/2 cup heavy or whipping cream or evaporated milk
Directions
Preheat oven to 400 degrees. Line a sheet pan with foil. Cut chicken breast halves into 1 1/2 to 2 inch chunks. Combine crushed potato chips, paprika and pepper in a medium bowl. Place cream or evaporated milk in a small bowl. Dip chicken chunks in cream or milk to coat, then dredge in potato chip mixture. Place coated chicken chunks in a single layer on the prepared pan. Bake about 10 to 15 minutes until chicken is cooked through and tender and coating is crisp. Serve hot.
Serves 4.
